The Qualities of Young and Aged Riesling
Riesling ages superbly, gaining complexity as acidity gently softens. With time, our wines become weightier with additional honeysuckle, quince and toast notes emerging.
With careful cellaring, Bin 51 is long-lived, drinking harmoniously for 20 years or more and showing increasing aged Riesling characteristics. Cellar Reserve Polish Hill continues to mature over 5-10 years from vintage, especially when from an exalted Riesling vintage.
Recognising how long to age your Riesling depends on your palate. Riesling offers immense pleasure in youth too. Its high acidity firmly matches salty and fried foods or works as a palate cleanser – cutting through fatty roast pork, for example.
Demystifying Riesling Tasting Notes
The terms ‘racy’ and ‘minerality’ are classic descriptors often used by wine critics to capture Riesling’s character. The ‘racy’ descriptor reflects an appreciation for the energetic and powerful nature of the wine. The acidity in our expressions produce linear and long palates, a key feature of racy Riesling.
Riesling is also notable for a cluster of flavours which fall under the umbrella term ‘minerality’. Our Rieslings taste consistently of salinity, wet-stone, talc and chalk – all adding distinct, mineral nuances.
